Share some of your favorite recipes!


Here's one of mine that I just had for lunch! (Almost all of my cooking is microwave/baking btw - I just don't have time for stovetop!)


Oriental Spicy Chicken and Veggies


1 cooked chicken breast cut up into chunks (or use a half of a bag of the store-bought-pre-cooked stuff!)
cup of broccoli
1/4 cup of carrots cut up (doesn't matter how)
1/2 cup of Teriyaki Sauce (use low sodium - it's better for you and you won't notice any difference in this dish!)
1 smidge of Curry Paste (from the oriental aisle at most grocery stores - be careful as this is very spicy. If you like it hot - just add more)
2 tbsp of Honey
Salt and Pepper to taste
Mix in the teriyaki sauce, honey and curry paste in a small microwaveable container. Nuke for 30 seconds and shake well to mix.
Add chicken and veggies and store in a fridge until you're about to eat it.
Shake the container carefully and nuke for 2 minutes.
Wait about 30 seconds to a minute to eat because it's hot!

When you have Heinz Baked Beans on toast, when cooking the beans add some organic or rich butter, about a lump, makes the beans even better.

Brown ground beef, make the taters.

A Puerto Rican staple. Every family has their own version of it, so there are hundreds of variations of the recipe.

It's not a main dish. It's more of a relish or marinade. I also use it sometimes in place of salt and pepper, or in a bruschetta, or in an omlette, rub it on a steak, grill it on chicken. Whatever. If you like it, you'll figure out what to do with it. Here is a simplified version of the recipe, with easy to find items.

Ingredients:

2 Green bell peppers, seeded & chopped
1 Sweet red pepper, chopped.
1 Onion, chopped
2 or 3 heads of garlic, peeled and chopped (or suit to taste)
1 cup cilantro
1 Tablespoon Olive Oil
Salt
Pepper

Toss it all into a blender or food processor. Chop it up until well ground (should look like a spreadable relish, with colorful little bits, not blended like a smoothie).

Spread it on meat (it can be grilled). Mix it in spanish rice. Throw it on a salad, potatoes, pasta, whatever you want. Refrigerate or even freeze the rest.

I use additional ingredients like recao, ajies dulce peppers, annato oil. Some use tomatoes, but I don't. If you like the base recipe, there is no reason why you cant add your own extras as well. It's traditional to do so.
 
My Garlic Chicken ^_^
First, I cook by heart, I rarely follow recipes, so all amounts are roughly.

Temp: Oven on 200C or 392F
Time: If the chicken is frozen about 2hours, if not roughly 1,5 hour depending on the size of course.

You'll need:
A whole chicken (pref not frozen)
7 Rather large pieces of a garlic
Garlic pepper
Salt
Garlic powder
2 apples, a little sour
Fresh basil (about half handful)
2 dl Cream 7% fat, not whipped (About a coffee cup)
Milk (About 1,5 dl or a coffee cup)
Rowan berry jelly (About 1,5 teaspoon)
Something to make the gravy/sauce thick (flour, corn flour, potato flour)
Oil (rape oil)
Chicken broth (I use the brand Knorr, which you can find in the US. I use 2 pieces usually. Go by feeling if you use something else)

1.Peel the garlic pieces. Take 4 of them and lay a knife on the pieces and press them so they break.
2.Slice up the apples like orange slices and take away the seeds.
3.Cut up the fresh basil.
*Mix all the above together and fill the chicken with it.

4.Take a good form for the chicken thats oven proof, just a tad larger then the chicken.
5.Put some rape oil on the form so the chicken doesn't burn.
6.Pour some rape oil on the chicken, about half a handful. Make sure it's all over the chicken.
7.Put garlic pepper, garlic salt and regular salt on the chicken (After taste - roughly a teaspoon of each)
*Put it in the oven.
*Make sure to take the chicken out every 20 min and take some of the oil thats in the plate and pour it over (makes the chicken a lot less dry)

8.When the chicken is almost done, take it out and pour the gravy that's around it into a pot.
9.Put on the stove and put some chicken broth in it
10.Put the rowan berry jelly in the gravy
11.Let it start boiling
12.Pour the cream in the gravy
13.Pour the milk in a small bottle and then the flour or whatever you are using to make the sauce/gravy a little thick. Shake it properly
14.Pour the milk into the gravy
15. Whip the gravy/sauce properly
*If it gets to thick pour some more milk in it. Don't put the flour etc into hot liquid, that'll make lumps. Always put it in cold liquid.

*Serve with boiled potatoes and other boiled vegetables.
