I saw this comment on another site and I thought it was a pretty good explanation 
"Obviously a battle between Force-wielders is too complex for unattuned bystanders to comprehend. When all combatants can manipulate unseen energy, there are thrusts and parries that occur between the fancy light stick attacks. When they can foresee the future, they will strike where they foresee their enemy going and pre-empt attacks before they even happen. A truly enlightened analysis of the Ep1 battle would have explained how these elements came into play."
